It’s Thursday, ya’ll! Almost to the weekend! I’ve found a super simple and delicious meal for you to make tonight!
It’s been a crazy week here in Columbia; we’ve had several recruits in town so all of my meals, besides breakfast have been out with the staff, recruit and their family! Not complaining, but I was definitely looking forward to a chill night at home where I could cook. I was whooped last night so I wanted to make something easy, quick and low maintenance. While Kyle was snoozing on the couch (should have snagged a picture of that!), I hopped on Pinterest and pulled up a recipe that I had planned to make earlier in the week.
That’s one thing I’ve started doing on Pinterest – creating hidden boards for dinner, lunch, smoothies, etc. ideas that help me easily find what I’m making that week and get all the ingredients on my Sunday grocery shopping trip! Then I can move them to a regular board and start over for the next week!
Chicken Parmesan Casserole
This recipe calls for only 8 ingredients:
The prep work takes no time!
- Chop up chicken into cube size pieces and layer bottom of the dish with them.
- Add the garlic, basil and red pepper flakes
o Note: I didn’t have red pepper flakes so I used chili powder, same effect
- Pour the jar of marinara over everything
- Add mozzarella and parmesan cheese
- Add bag of croutons (I used and recommend the Texas Toast Garlic Butter kind)
- Add another smaller layer of mozzarella and parmesan cheese
- Bake at 350° for 40-45 minutes
Then enjoy! This find was SO delicious and was immediately added to my rolodex of repeat meals. It was also light enough where I had a serving and a half and felt totally content. No food coma! And I promise you, this recipe is easy enough I’m 100% confident Kali can pull it off! J
