Saw it. Pinned it. Did it: Crock-Pot Breakfast Casserole

Hi SPD-ers! Hope you’re having a great week! I’m back for another food version of Saw It. Pinned It. Did It that I think will make you want to run home and start cooking!

Crock-Pot Breakfast Casserole

I can’t believe I’ve already been in South Carolina for two months! Kyle and I have had a couple visitors since we’ve moved but in the coming months, we’ll have a lot! I love to cook and especially cook for my friends and family. I found this breakfast casserole recipe when my dad was in town a couple months ago and we had happy, full bellies the next morning!
As always, I love crock-pot recipes! This one is super easy and requires minimal preparation. (P.S. did anyone get Kali a new crock-pot for her birthday?!)

Ingredients
1 dozen eggs
1 cup of milk
2 lbs. hash brown potatoes
1 lb. of bacon (cooked, drained and cut into pieces)
½ cup of diced onions
3 cups of shredded cheddar cheese
¼ teaspoon dry mustard
¼ teaspoon garlic powder
1 tsp. salt & ½ tsp. pepper
This makes 8-10 servings! We had a ton leftover (and three of us were eating it). Depending on the size of the group you’re cooking for, I would highly recommend making this as a half portion!



How-To
  1. Beat all the eggs until well blended
  2. Beat in milk, garlic powder, mustard, 1 tsp. salt & ½ tsp. pepper – Set aside
  3.  Layer! Start with the potatoes, 1/3 of onions and S/P to taste
  4. Then comes 1/3 of the bacon!
  5. And of course 1 cup of cheese
  6. Repeat layering 2 more times to have a total of 3 layers, ending with cheese (This will depend on the size of your crockpot!)
  7. Pour the egg mixture over the layers. Cook for 7-8 hours on low!




I was so excited to get up that next morning and the smell made it easy to get out of bed! And it was definitely delicious!

  2. This looks awesome and would be great to do when you are going out with friends and they are staying over afterwards. Breakfast is ready without any effort. Have a great weekend!
