Really Simple Recipes for People Who Really Suck at Cooking. Really. - Lemon Pepper Salmon

I use to categorize salmon in the "way over my head" category when it comes to cooking. After all, this is the "Really Simple Recipes for People Who Really Suck at Cooking. Really" series. Tim cooked it from time to time and it was always delicious. I just stuck with making the sides. 

But then we discovered something at our local Kroger and, just like that, salmon has gone from daunting to downright delightful.

Lennox Flour - 7 Months Old

Last week it snowed a foot in Lexington. That's right.. a FOOT. So naturally the city shut down and people went crazy. Our office was closed Monday-Wednesday and we had delays the rest of the week.

You'd think with all the time on my hands I would be uber productive. Working out, doing laundry, cleaning, blogging! Well, if my blog is any indication of my productivity last week, you can see I did nothing. I used the snowed-in days to post-up on the couch, eat, drink, and nap. It was a nice little stay-cation. But by the end of it I was so over being cooped up in the house and was ready to get back to work!

Something I did make time for last week was watching the dogs romp around in the snow. It was Lennox's first time seeing snow and so Piper loved showing her how awesome it is. (Bear is a big baby and doesn't like the cold or snow. So he just did his business and came back in.)

Anyway.. today I thought I would share an update on Lennox because last time you saw her, she was just a few weeks old and now shes almost 7 months!

Fitness Evolution

It's interesting to me that the more I talk about fitness and the more I incorporate it into my life, I start to have these little revelations about it. I start to realize things about myself or about staying healthy in general. And what kind of blogger would I be if I didn't share those with you?

So here you go...

The important thing I've found to remember about fitness (and I've said it before) is that yesterday has no bearing on today. Before when I brought this up I was saying that even if you fell off the wagon yesterday, that doesn't mean you can't do well today.

But I've found it also has the opposite meaning. Just because you worked your butt off in the gym yesterday, or just because you ate really healthy yesterday, doesn't mean you can go crazy today.

Fitness is something that doesn't end. You don't get to work out 100 times and then BAM! You're set for the rest of your life. It doesn't work like that (unfortunately).

That's why people say it's a "lifestyle change", because it has to become part of your life. For the rest of your life.

Sounds daunting, doesn't it?

In my opinion, that's why it's so hard. It's never-ending. That's why so many people fail.

This just proves how important it is to find something that works for you. Something you like to do that fits into your life. And when that thing stops working for you, move on to something else.

When I stopped loving running, I started hitting the weights and trying interval training. When after-work workouts didn't fit into my schedule, I started going before work. And that's what's working for me now.

Who knows what it'll be doing 6 months from now. Maybe I'll be swimming laps 3 times a week, maybe I'll be doing yoga every night (hah.. yeah right).

Just remember if something stops being fun or becomes too hard to fit into your life, then you can make changes. You aren't married to one fitness strategy for the rest of your life. This is one relationship where monogamy is NOT the way to go. You should be the ultimate fitness player, if you will.

Fitness is a journey. Let it evolve with you.

Commit To Fit ~ January Results

Can you believe it's already February? It's crazy but I'm happy because that means we are inching closer to the time when my gym will no longer be packed with "resolutioners" and the machines will free up. YAY!

How is everyone doing on their goals? Still holding strong?

I started my "Commit to Fit" personal challenge in November. I didn't want to wait until January. I wanted a head start.

While I haven't lost the 15 pounds I would like to (I've lost 4 at this point), my biggest goal was to make fitness a consistent part of my life. And I think I'm getting there. Slowly but surely.

Above you can see my results from January.

All of the purple "walks" are the 10am & 2pm walks we take during work. We try to walk a mile twice a day. Sometimes we can sometimes we can't. But it's a great way to get out and get some fresh air and get our legs moving.

It seems fitness is slowly inching its way into my life. Here's my progression:

5 workouts in November.
9 workouts in December.
12 workouts in January. 

That's progress to me. Hopefully I can continue to increase that number and also increase the quality of workouts.

At this point in the process I am more concerned with increasing the quantity and quality of fitness activities in my life than I am with the number on the scale. I'm also more concerned with trying to eat healthy and control my portions. So, I'm not letting the scale number freak me out.

I'm going to give this a good solid effort for several months before I start to worry about that. I have to make consistent fitness part of my world before I start expecting visible results.

Maybe that's a weird way to look at it but I don't expect to see any results on the scale or in the mirror yet. And I'm OK with that. But after 6 months, if I don't see anything, perhaps I'll have to reevaluate my strategies (after throwing a fit).

I just realized the other day that this is truly the first time in my life I'm attempting to lose weight. I don't say that to brag or anything, but to show that I really have no idea what I'm doing.

I've never gone down in weight, just up, so this is new territory for me. I also think that is why I'm less concerned with the number right now, because I'm not desperate to lose 15 pounds (although that's the ultimate goal). I am desperate, however, to create good habits now, realizing that if i don't, I may be at a point later that I don't want to be.

Instead of letting myself get to that point and then try to fix it, why not just try to prevent it altogether?

So maybe that's my fitness strategy: prevention. I'm currently pretty healthy and fit overall (obviously there's areas for improvement). So my main goal is to prevent any decrease to my current fitness level, and to improve while I'm at it.

It's interesting that the little boy admits to insulting girls but then denies insulting his sister. That is so representative f how many people respond to this issue. They have one opinion about women in general, but get defensive/protective when talking about their women. Food for thought.

Also, when the little girl at the end says, "It run as fast as you can", I mean.. cue the waterworks. I lost it. 

YES, little girl. You always run as FAST as you can. Run like a girl. Even when that means beating a boy.
